
I have been making this cake for forever. Well, it feels like it! For over 4 years. It's a family favourite but when I made it this week, it just didn't have the same spark. The cake was chewy and a bit flavourless. I honestly don't know what I did wrong. The icing was lovely, as it always is, so I may try the icing with a basic chocolate sponge. This sponge recipe doesn't have much butter at all in it, so I will try one with a bit more fat content to see if it has less of a rubbery texture. It was a bit disappointing, but it did all get eaten so it wasn't too bad! Maybe I just have high standards for myself now.

ReplyDeleteThat looks really yummy! I made a cake today too but I think we're our own worst critics when it comes down to it. I kept on picking up on things I could have improved on but most people seemed to like it!

I must admit I was a bit disappointed when I tried this recipe as my cake went a bit rubbery too and didn't rise particularly well. I assumed I was at fault as so many people had said it was a brilliant recipe. The icing was absolutely delicious though. I like how you've crushed maltesers round your cake.

I made this cake a few years ago (possibly based on one of your posts on bakebakebake, haha) and I was disappointed, and suspicious about the butter quantity. I googled it and found some discussions about the butter, with the theory that it was in fact meant to be 150g, not 15g. I keep meaning to re-try it with the revised quantity - mine was downright rubbery!
ReplyDeleteHmm that's a good idea, I'm not sure if 150 would be too much but 15g does seem like an odd amount. I always thought maybe some of the fat came from the milk too but something just isn't 100% about it. It doesn't taste much of the horlicks either so I'm thinking a good chocolate sponge recipe would work just as well.
